Fruit of the Vine

This vineyard is located just outside of Niagara-on-the-Lake, a quaint, small town full of boutiques and galleries that lies not too far from the Canadian side of Niagara Falls. A great Canadian specialty is a type of dessert wine called icewine. Icewine takes full advantage of the frozen Canadian winters, as the grapes are harvested during the cold months, when the sugars become crystallized by the chill, allowing for a greater concentration of sweetness and resulting in a deliciously sweet wine. Icewine seems to come in all the classic grape shades, including red, white, and blush. I confess that I felt "obligated" while there to sample a variety of each of these, in order to fully experience this local specialty. Hey, it's all about the journey, right? Needless to say, it was a very happy experience.
